Based in Paris, French-Lebanese chef Joumana Jacob of Maison Joumana is a soulful food artist. Fusing Mediterranean with Japanese and Lebanese with French cuisines, Joumana creates a symbolic relationship between food, herself, and those who find themselves at her table. By transforming local ingredients into sculptures and tables into canvases, Joumana curates experiences where connection is foremost.
For Joumana, food is about the poetry of creation. From her expressive perspective, bread becomes a humble recipe to connect across time and space through four essential ingredients: water, earth (flour), air (rising) and fire (cooking).
A classic in its simplicity, Joumana’s pain brioche recipe invites creativity and pleasure.

Makes 1 loaf
335 g of milk
555 g of T45 flour
20 g of fresh yeast
½ tbsp. of salt
75 g of neutral oil + 50 g for shaping a little bit of olive oil
1 tbsp. of sugar
How To
1. In a small saucepan, heat the milk to 30°. Pour it into a bowl, add 1 tbsp. flour and yeast, mix, and leave to rest for 15 minutes.
2. Sift the remaining flour over another bowl, add the oil, sugar, and sourdough mixture that has now been activated.
3. Mix using a spatula until you are left with an almost homogeneous paste. Then coat your hands and your work surface with oil and knead the dough vigorously for 15 minutes. When the dough is smooth and elastic, place it in a bowl, cover, and let rise for 45 minutes.
4. Divide the dough into 3 equal pieces, make a braid, and roll it into a crown, then brush with beaten egg. Leave to rise for 30 minutes to 1 hour more, then bake for 20 minutes at 180°.
5. Once it’s out of the oven, leave to rest under a clean cloth for 15 minutes before eating.
