Home Cooking: Warm Spiced Apple Juice
Developed by Chiara Barla, head chef and curator at FRAMA’s Apotek 57 in Copenhagen, her Warm Spiced Apple Juice recipe is a fragrant and warming drink to enjoy over the cooler months.
"Being Denmark-based makes us appreciate our local produce. We are always on the hunt for seasonal fruits and vegetables. Apples, in this case, are one of the oldest, average standby Danish staple that has been accompanying everyday lunch packets and cafeteria meals since the beginning of time."

4 servings
1 lt of apple juice
1 piece of ginger (sliced)
2 pieces star anise
1 cinnamon stick
1 lemon peel
1 orange peel
1 piece of lemongrass
2 kaffir lime leaves
Combine all the ingredients in a pot and bring to a gentle boil.
Let the mix cool down allowing the spice and herbs infuse the juice.
Strain the juice and serve warm.
Add a dried citrus peel if available.
